Spanish Chicken with Chorizo and Potatoes

3 Tablespoons olive oil (I did not send)
12 chicken thighs
1.5 lbs chorizo cut in to 1 inch chunks
2 lbs baby potatoes (cut larger ones in half)
1 red onion peeled and roughly chopped
2 teaspoons dried oregano
grated zest of one orange
salt and pepper to taste


1. preheat oven to 350
2. toss potatoes in olive oil and put in baking dish - pour all of the extra olive oil in to the pan with them. Season with salt and pepper.
3. place chicken pieces, chorizo and onions with potatoes, Season with oregano and orange zest. 
4. bake for 45 - 60 minutes or until chicken and potatoes are done. 

I sent couscous and broccoli along with it. 


  1. Need to use a different kind of sausage. Chorizo does not look like the sausage in this picture at all!
