Hummus Crusted Chicken

If you follow the link - I am doing the dish a bit different than this recipe. No lemon, the Fresh and Easy hummus is pretty lemony and I added butternut squash and red potatoes to the vegetable mix.
4 chicken breasts
1 onion diced
1 zucchini squash cut in chunks
1 yellow squash cut in chunks
1 bag of pre-cut butternut squash
4 or 5 red potatoes cut in chunks
1 container (10oz) of hummus
salt and pepper
1. cut all of the vegetables in to bite sized chunks. Toss with olive oil and salt and pepper and put in 9x13 pan.
2. season chicken breasts with salt and pepper and place on top of cut up vegetables.
3. generously coat chicken with hummus
4. bake uncovered at 400 for 25-30 minutes
