Patty Melts
2 onions, thinly sliced
1/4 small onion, minced
1 lb ground beef
1 T ketchup
1/2 t garlic powder
1/4 t pepper
1 t kosher salt
Swiss cheese slices
Sharp cheddar cheese slices
Rye bread
Mayonnaise
Heat oil in skillet over medium heat. Cook thinly sliced onions until deep golden brown and soft, about 20-25 minutes. Set aside.
Combine ketchup, minced onions, and seasonings with ground beef. Form patties by pressing between two sheets of plastic wrap until 1/4 inch thin. Brown in skillet, set at medium-high heat about 2 minutes on each side.
To assemble sandwich, spread mayo on one side of bread and place on griddle or skillet over medium heat, mayo side down. Then place cheddar, patty, caramelized onions, Swiss in order. Top with another piece of rye bread. Cook weighted with a heavy, foil lined pan. Spread top of bread with mayo before flipping. Cook until both sides of bread are golden brown and cheese is melted.

**Subbing ground turkey for beef
***Can use butter or olive oil for spread if preferred
