Farmer's Casserole

3 c. frozen shredded hash browns
1 c. diced cooked ham, sausage or bacon (deli ham works great)
1/4 cup chopped green onions
3/4 cup shredded Monterey Jack cheese
5-6 eggs (recipe calls for 4 but I always use an extra or two)
1 can evaporated milk
1/4 tsp. pepper
1/8 tsp. salt

Layer hash browns, ham, onions and cheese in a greased 8x8 baking pan (or in a 12-cup muffin tin).  Blend eggs, milk and seasonings and pour evenly over hash brown layer.  Cover and refrigerate overnight if desired.  Bake one hour at 350 until eggs are set (or 30 minutes in muffin tin).  Serves 6-8.
