Prosciutto and Sweet Potato Pasta


1 box pasta
1 large sweet potato, diced
2 tablespoons olive oil
2 cloves garlic
8 thin slices prosciutto
4 oz jar sun-dried tomatoes in oil, drained and sliced
salt and pepper
1/4 cup shredded fresh basil leaves
1/2 cup heavy whipping cream


Cook the pasta according to package directions. Steam, microwave or boil the sweet potato for about 5 minutes or until tender.

Heat the oil in a saucepan, add garlic and sweet potato and stir over medium heat for about one minute. Add the prosciutto and tomato and cook for one more minute. Then add the heavy cream and bring to boil and add the sauce mixture to the pasta. Add the basil and season with salt and pepper.

Serve with crusty bread
