Baked Artichoke Chicken
This chicken recipe won "Best Chicken" on "The Chew" TV show.

Ingredients:
4lbs. chicken thighs and legs (I am using boneless skinless thighs for food group)
1 can artichoke hearts, quartered
8oz package mushrooms, quartered
1 medium yellow onion, chopped roughly
2 Tbls brown mustard
1/4 cup olive oil
1/4 cup white wine vinegar
1/4 cup white wine (could substitute chicken stock)
3 cloves garlic, chopped
1/4 tsp thyme
1/4 tsp tarragon
1/4 tsp dried basil
salt and pepper to taste
Directions:
1. Place artichoke hearts, mushrooms and onion in the bottom of large baking dish.
2. Place chicken pieces on top of veggies.
3. mix all remaining ingredients to form sauce - pour sauce over chicken - use all of the sauce.
4. Bake at 375 for 45 - 60 minutes, until onion is cooked and chicken juices run clear.
