Cheesesteak Sandwiches
1 lb. boneless steak, sliced very thin (tip: freeze meat and slice in a food processor)
2 Tbsp. butter
1 medium green bell pepper, thinly sliced
1 medium yellow onion, thinly sliced
kosher salt
fresh ground black pepper
hot sauce, optional
4-6 slices Provolone cheese
4-6 Hoagie rolls
In a large skillet, melt butter over medium-high heat. When melted and bubbly, add steak. Stir constantly while it cooks. When the meat is about halfway done, add onions and peppers. Season with salt, pepper, and a few drops of hot sauce if desired. Continue stirring until meat is cooked through and the onion and peppers are tender. Spoon meat filling onto sliced rolls and add a slice of Provolone cheese. Place sandwiches, open-faced, onto a baking sheet and slide uner the broiler for 1-2 minutes unitl bread is toasted and cheese is melted. Serve immediately. Makes 4-6 servings.
