Lemon Chicken Linguine

4 chicken breasts, sliced
1/2 cup olive oil
2 Tbsp. lemon juice
2 Tbsp. soy sauce
1 Tbsp. brown sugar
2 garlic cloves, minced
2 Tbsp. minced fresh parsley
1 Tbsp. Cajun seasoning (more if you like spicy)
1 pkg. linguine or fettuccine
1 lemon, zested and juiced
1/2 cup chopped green onion
1/4 cup chopped fresh parsley
salt and pepper to taste
shredded Parmesan cheese

Place chicken in a resealable plastic bag.  Combine olive oil, 2 Tbsp. lemon juice, soy sauce, brown sugar, garlic, 2 Tbsp. parsley, and Cajun seasoning; pour over chicken.  Seal bag, turn to coat, and refrigerate 4-8 hours.  Cook linguine according to package directions.  Meanwhile, heat a large skillet on medium-high.  Pour in chicken and marinade and cook, stirring occasionally, until chicken is lightly browned and no longer pink.  In a small bowl, combine zest and juice from lemon, green onion and 1/4 cup parsley.  Drain linguine and add to skillet with chicken.  Add zest/green onion/parsley mixture and stir until well combined.  Add salt and pepper to taste; heat through.  Serve with shredded Parmesan cheese.  Serves 8.
