Pioneer Woman Meatloaf
1 cup whole milk
6 slices white sandwich bread
2 lbs. lean ground beef
1 cup grated parmesan cheese
1 tsp. seasoned salt
freshly ground black pepper to taste
1/3 cup minced fresh flat leaf parsley
4 whole eggs
10 slices bacon
1 1/2 cups ketchup
1/3 cup brown sugar
1 tsp ground mustard
tabasco sauce to taste
Preheat over to 350. Pour milk over the bread slices and allow to soak in for several minutes.
Mix meat, bread and milk, cheese, parsley, eggs and spices together with hands until well combined.
Form the mixture into a loaf shape and place on broiler pan to allow fat to drip off (line bottom of pan with foil)
Lay bacon slices over the top and tuck in under meatloaf.
Combine remaining ingredients to make the sauce and pour half over the bacon.
Bake for 45 minutes, then pour the other half of the sauce over the meatloaf and bake for 15 more minutes.
