Spicy Beef and Broccoli Stir-fry
For food group, I doubled the marinade and the meat.
1/2lb beef tenderloin trimmed and cut into strips
1t cornstarch
1T oil
4 cups broccoli florets
3 scallions thinly sliced
Marinade:
2T dry Sherry
2T dark soy sauce
1T peeled, grated fresh ginger
5-6 cloves minced garlic
1t dark sesame oil
1/4 t crushed red pepper
Marinate beef for 1 hour in a ziploc bag.
Drain marinade into a measuring cup and add water to make 1/3 cup of liquid. Add cornstarch and stir until dissolved.
Heat skillet or wok and add oil and beef. Fry about 1 minute. Transfer to a plate. Add broccoli and stir fry for 3 minutes then cover and let steam for 1 minute. Return beef and marinade to skillet. Heat through until thickened. Sprinkle with scallions and serve with rice.
