Crock Pot Moroccan Chicken


2 16oz cans garbanzo beans
1 12 oz can diced tomatoes
1 small red or yellow bell pepper, seeded and diced
1 small onion, diced
2 Tbls. tomato paste
2 Tbls. peanut butter
1/2 cup chicken broth
3 cloves garlic, minced
1 1/2 tsp. cumin
3 or 4 boneless skinless chicken thighs (option - use breast)


Mix everything together but the chicken and place in the crock pot with the chicken. Cook on low 6 - 8 hours. Serve with brown rice or couscous.
