Cowboy Quesadillas

1/2 cup white rice
1/3 cup black beans
1 cup diced or shredded cooked chicken
1/3 cup frozen corn
2/3 cup diced tomato
3 Tbsp. sliced green onion
1-1/2 cup shredded cheese (any type you want)
1/4 cup barbeque sauce
6 small tortillas
equal parts barbeque sauce and ranch dressing, for dipping

Combine rice, beans, chicken, corn, tomato, green onion and cheese.  Add barbeque sauce and stir to combine.  place about 1/3 cup on half of a tortilla; fold over and heat in a skillet til lightly browned and warmed through, flipping once.  Repeat with remaining tortillas (I put the finished ones in the oven to keep warm).  Serve with barbeque-ranch dipping sauce.  Serves 4.
