Baked Chicken Fajitas

Directions for food group this week: thaw chicken and slice into thin strips. Slice onion. Place chicken, pepper strips, onions, and canned tomatoes (drained) into greased 9x13 baking pan; stir to mix evenly. Combine 2-1/2 Tbsp. oil to seasonings; pour over chicken and vegetables and toss until evenly coated. Bake at 400 degrees for 20-25 minutes, or until chicken is done. Serve in tortillas with cheese and sour cream if desired.
Note: I slightly increased the recipe to provide a couple more servings, so you have two smaller cans of tomatoes instead of one, and a little more seasoning mixture. I also gave you two pounds of chicken instead of one -- if your kids are like mine, they eat mostly chicken and leave the onions and peppers out!
