Roast Beef
I thought I'd posted this one already, but I can't find it, so here it is ...
1 boneless cross-rib roast, 2-1/2 to 3 lbs., trimmed
1 packet dry onion soup mix
1/4 cup ketchup
1 Tbsp. Worcestershire sauce
2 cups water
Place roast in crock pot. Combine soup mix, ketchup, Worcestershire sauce, and water. Pour over roast; add a little more water if necessary, so roast is at least half covered with water. Cover and cook on low 8 hours or til very tender. Thicken juices with flour to make gravy, if desired. We like to serve this with mashed potatoes and steamed carrots, or you can add cubed potatoes and carrots to the roast about halfway through cooking time.
