Mandarin chicken

1/2 cup soy sauce
1/2 cup apricot-pineapple preserves
1 clove garlic, minced
1/2 tsp Ginger
1/8 tsp pepper
1 frying chicken, cut-up (I use thighs and legs)

Mix all ingredients, except chicken, in a jar and shake. Brown chicken in frying pan for about 10 minutes. Add sauce and keep turning until cooked. If the sauce dries up add a little water. Cover. Serve over rice
