Garlic Panko Chicken Strips
1-1/4 to 1-1/2 lbs. boneless skinless chicken breasts, cut into strips (about 5 per breast)
5 Tbsp. butter, melted
1 clove garlic, minced
1 cup panko
1/4 cup grated Parmesan cheese
salt and pepper to taste
Combine garlic and melted butter in a shallow bowl. In another bowl, combine panko, Parmesan cheese, salt and pepper. Preheat oven to 400. Prepare a baking pan with a rack or parchment paper (helps keep the breading on the chicken). Pat chicken strips dry. Dip in butter mixture, then in panko mixture to coat. Lay on prepared baking pan and bake about 20 minutes, carefully turning once halfway through, or til chicken is cooked through. Ranch dressing or BBQ sauce make good dipping sauces. Makes 6 servings.
