Chicken Curry


1/3 cup butter
1 1/2 teaspoons curry powder
1/2 small onion, coarsely chopped
1 clove garlic, chopped
1/4 cup flour
2 teaspoons sugar
1/2 teaspoon ground ginger
1/4 teaspoon pepper
1 medium tomato, chopped
1 medium tart apple, peeled and chopped
1/4 pound ham, chopped
2 cups chicken broth
1 1/2 pounds boneless skinless chicken breasts, diced in to bite size pieces

hot cooked rice


heat butter in saucepan, cook curry poder, onion and garlic in butter until onion is translucent.

stir in flour, sugar, ginger, mustard, pepper, tomato, apple and ham - cook 5 minutes

stir in chicken broth - heat to boiling.

add chicken pieces. cover and simmer for 30 - 40 minutes or until chicken juices run clear.

serve over rice with as many toppings as you like.

green onions
chow mein noodles
shredded coconut
fried onions
