Peanut Chicken Pockets

2 cups cubed cooked chicken
2 celery ribs, chopped
1/4 cup chopped cucumber
1/4 cup bean sprouts
1/4 cup chopped peanuts
1/4 cup mayonnaise
2 green onions, chopped
1 Tbsp. minced fresh parsley
1 Tbsp. lemon juice
1/4 tsp. salt
1/4 tsp. pepper
4 pita breads, halved
8 lettuce leaves
8 tomato slices

In a large bowl, combine the first 11 ingredients.  Line pita halves with lettuce leaves and tomato slices.  Spoon chicken mixtrue into pitas.  Makes 4 servings.  This recipe is from Simple & Delicious magazine.
