Hawaiian Haystacks
1 cup water
2 Tbsp. cornstarch
3/4 cup brown sugar
1 tsp. salt
1 20-oz. can pineapple
2 cups chicken, cooked and cubed
2 Tbsp. soy sauce
1/4 cup white vinegar
hot cooked rice
desired toppings: pineapple chunks, mandarin oranges, sliced green onions, sliced celery, chopped green pepper, chopped tomato, slivered almonds (I like them toasted), shredded coconut, shredded cheddar cheese, chow mein noodles.
Combine water, cornstarch, brown sugar and salt; stir until smooth. Add the juice from the can of pineapple (save fruit for topping); bring to a simmer over medium heat. Cook 5-7 minutes or until thickened. Add chicken, soy sauce and vinegar; cover and simmer 5-10 minutes longer, stirring occasionally. Serve chicken mixture over rice with desired toppings. Serves 4.

these are very good. we really like the brown sauce instead of the cream sauce. seems more hawaiian.
