Spicy Pork tacos (revised)
I originally picked up this recipe from my sweet friend Val...but it was a little too spicy for the families so i revised it a bit.
- 2-3 lb pork shoulder roast
- 8 oz can tomato sauce
- 1 small can of chipotle peppers in adobo sauce
- 4 cloves minced garlic
- 1 t. cumin seeds
- 1/2 t. salt
- 1/2 c. water
Place pork roast in crock pot. Combine tomato sauce, peppers, garlic, cumin seeds and water. Pour mixture over pork roast. Cook all day until it shreds easily.
Serve on warm tortillas with shredded cheese, a squeeze of lime, and avocado.
