Brown Sugar Meatloaf

  • 1/2 C. brown sugar, firmly packed
  • 1/2 C. ketchup
  • 1 1/2 lbs. ground beef
  • 2 eggs
  • 3/4 C. milk
  • 1 small onion, chopped
  • 3/4 C. finely crushed saltines
  • 1 1/2 t. salt
  • 1/2 t. ground black pepper
  • 1/4 t. ground ginger

Preheat oven to 350.  Lightly grease a bread loaf pan.  Press the brown sugar into the bottom of the pan, then spread the ketchup over the sugar.  In a mixing bowl, combine the remaining ingredients and shape into a loaf.  Place on top of the ketchup.  Bake for one hour, until juices run clear.
