Spicy Thai Peanut Butter Pasta


1 lb. Pasta

1 cup creamy peanut butter
2 14.5 oz cans chicken broth
1 cup coconut milk
2 heaping tablespoons red curry chili paste
1/2 tsp. red pepper flakes
1 clove garlic minced
1 - 2 cups cooked chicken (or shrimp) cut into bite size pieces

shredded coconut
chopped peanuts

Directions: (so easy!)

1. Cook pasta as directed.

2. Heat remaining ingredients to make sauce.

3. Combine pasta and sauce.

4. Top with coconut, peanuts and/or cilantro as you like!
