Smothered Beef Burritos

  • 2-3 lb. beef roast
  • 1-2 cans of El Pato sauce (mexican tomato sauce, yellow can)
  • burrito size flour tortillas
  • 1 can black beans
  • 1 can pinto beans
  • 2-3 C. shredded mexican blend cheese
  • shredded lettuce
  • tomato, chopped
  • sour cream
  • avocado, chopped
  • 2-3 C. homemade enchilada sauce (click here)

Place roast in crock pot with el pato sauce.  Cook all day, until tender.  Shred roast.  Place shredded beef in tortilla with  warm beans, then roll up and place on plate.  Top with hot enchilada, cheese, lettuce, tomato, sour cream and avocado.
