Roast Beef Sandwiches w/ Herb Mayo

  • 1-2 lbs of sliced roast beef
  • sandwich rolls
  • 3/4 C. mayonnaise
  • 8-10 cloves roasted garlic, mashed
  • 1 T. fresh lemon juice
  • 2 T. finely chopped fresh flat leaf parsley
  • 1 T. finely chopped fresh thyme
  • 1 T. finely chopped fresh marjoram
  • salt and pepper

Make herb mayonnaise by combining it with roasted garlic, lemon juice, fresh herbs and salt and pepper.  Spread both sides of roll with herb mayonnaise, then top with roast beef.  Serve cold.
