Pasta with caramelized onions and parmesan

  • 1 T. olive oil
  • 3 med onions, halved and thinly sliced
  • salt and pepper
  • 2 T. brown sugar
  • 1 package pasta
  • 3 T. butter
  • 2-3 oz. parmesan cheese

In a large skillet heat oil over medium heat.  Add sliced onions, salt and pepper, and brown sugar.  Once juices are released,  about 5 minutes, reduce heat to medium low and let onions cook slowly.   Stir occasionally until sweet and golden brown. 

In separate pot, cook pasta until al dente.  Drain pasta, reserving 1/2 C. of pasta water.  Return pasta to pot, add butter and onions.  Season with salt and pepper.  Gradually add enough pasta water to create a thin sauce that coats the pasta.  Serve topped with parmesan.
