Oven Fried Chicken

1 cup flour
2 tsp. salt
1/4 tsp. pepper
2 tsp. paprika
1/4 cup shortening
1/4 cup butter
1 cut-up frying chicken, or 4-5 bone-in chicken breast halves

Heat oven to 425 degrees. Put shortening and butter in a 9x13 inch baking pan and place pan in oven to melt (watch closely and take pan out as soon as it's melted; it burns quickly!) Combine flour, salt, pepper and paprika in a large ziploc bag. Add chicken pieces one at a time and shake to coat thoroughly. Place chicken meaty side down in melted shortening mixture. Bake uncovered 30 minutes, then turn chicken pieces over and bake until juices run clear, about another 30 minutes. Serves 6.
Note: you can reduce the amount of shortening/butter by about half if desired. Skin can be removed from the chicken if you want, or left on.
