Chicken Tacos with Mango Salsa
- 4 chicken breasts, cut into small pieces
- 2-3 true lime packets
- season salt
- butter
- 12-15 corn tortillas
- jack cheese
- mango salsa (from fresh and easy)*
Fry chicken pieces in a couple tablespoons of butter in a frying pan. While cooking, sprinkle on the season salt and lime packets.
As the chicken cooks, spray some cookie sheets with cooking spray, lay the tortillas on the sheet, then sprinkle cheese on top of the tortilla. Place the tortillas in a warm oven until the cheese melts. This helps the tortillas from splitting apart later.
As soon as the chicken is cooked through, turn the heat up to high to evaporate the remaining liquid. As soon as the liquid is evaporated the chicken will start to turn golden. As soon as the chicken starts to get a little color, pull it off the heat so not to dry it out.
Layer chicken and mango salsa on the tortillas with the melted cheese.
*if you do not have access to a good mango salsa, you can make some using fresh diced mangos, red onion and lime juice.
