Easy Apricot Chicken


1/2 onion, diced
1/2 cup balsamic vinegar
8 boneless skinless chicken thighs
1 small bottle Russian dressing
1 small jar apricot preserves.

1. sautee onions in balsamic vinegar until soft.

2. put thighs in baking dish, cover with cooked onions, dressing and jam. Cook at 350 degrees for 45 minutes - 1 hour.

That is it! So yummy and easy. We serve with rice or potatoes.
