Stuffed Chicken Parmesan
8 small chicken breasts, flattened to 1/4 inch
1 cup shredded mozzarella cheese
1/4 cup minced fresh parsley
1 cup grated Parmesan cheese
1/2 cup flour
4 Tbsp. olive oil
1 jar marinara sauce
Preheat oven to 400 degrees. Combine mozzarella and parsley. Sprinkle mixture down center of each chicken piece. Roll up tightly and secure with toothpicks. Combine Parmesan and flour in a bowl; dredge chicken rolls, pressing to adhere. Heat oil in skillet. Brown chicken rolls on all sides. Remove toothpicks if desired. Pour 1 cup marinara sauce in 9x13 pan; place chicken rolls on top. Pour remaining sauce over chicken rolls and sprinkle with additional Parmesan cheese if desired. Bake 20-30 minutes or until chicken is done. Slice chicken rolls into spirals and serve with pasta. Makes 8 servings.
