Smothered Chicken

4 boneless chicken breasts
1/4 tsp. salt
1/4 tsp. lemon-pepper seasoning
1 Tbsp. vegetable oil
8 bacon strips
1 medium onion, sliced
1/4 c. packed brown sugar
1/2 c. shredded colby-jack cheese

Sprinkle chicken with salt and lemon pepper. Cook chicken in oil in a large skillet over medium-high heat until juices run clear. Remove chicken and keep warm. In the same skillet, cook bacon until crisp. Remove to paper towels. Drain drippings, reserving 2 Tbsp. Saute onions and brown sugar in reserved drippings until onion is golden. Place two bacon strips on each chicken breast; top with onion and cheese. To melt cheese, return chicken to skillet and cover; heat for a few minutes til melted, or broil chicken for a couple of minutes til melted.
