Monterey Chicken

  • 4-6 chicken breasts
  • 1 bell pepper, chopped
  • 3/4 C. sliced mushrooms
  • 1 C. monterey jack cheese
  • 4-6 slices of bacon, cooked and crumbled


  • 1/4 C. soy sauce
  • 1 can of sprite

honey mustard sauce:

  • 1/4 C. mayonnaise
  • 1 T. honey
  • 1 T. dijon mustard

Marinate chicken in soy sauce & Sprite for a few hours or overnight.  After marinating, place chicken breasts on grill and cook until juices run clear.  While chicken is cooking, saute chopped pepper and mushroom; set aside.  Once chicken is done, place a large piece of foil on the grill and transfer the chicken to the foil.  Spread a little bit of honey mustard sauce on each breast, then cover with peppers, mushrooms, bacon and shredded cheese.  Heat until cheese melts.
